Omega-3 fatty acids are composed of glycerin and three fatty acids. The biological properties of triglycerides depend on the way the fatty acids are bound to the glycerin. Fatty acids consist of carbon (C), hydrogen (H) and oxygen (O), forming carbon chains.
Most of the few unsaturated fatty acids are essential, ie vital, but supplied externally by food. The organism itself cannot create these at all.
Unsaturated fatty acids are the building blocks of tissue hormones and are involved in the overall metabolism as well as in the regulation of cholesterol, and thus the condition of blood vessels and circulation, suppression of inflammation, rheumatic diseases, and even hair growth.
Omega-3 and Omega-6 fatty acids are known. These should be 1:10. Because those Omega-6s are found in literally all fats of animal origin and Omega-3s are found only in fish.
The most important representatives of Omega-3 fatty acids are:
Docosahexaenoic acid (DHA), eicosapentaenoic acid (EPA) and Alpha-linoleic acid. Alpha-linoleic acid has 18 C atoms and is therefore the shortest member of the Omega-3 family.
Larger amounts of this acid are found in soybean and linseed oil (excluding salmon oil).
Eicosapentaeno is derived from the Greek "eicosa" means 20; "penta" = 5 this is the most famous in salmon fat. Thus in Omega-3 and has 20 (carbon) C atoms. This name was used to name the tissue hormones - eicosanoids, for which this acid is the basis.
Due to its high content, docosanoic acid "docos" is also important 22; "hexa" = 6 with 22 (carbon) C atoms and six duplicated linkages; no other natural fatty acid has multiple duplicate bonds. This acid is important for brain activity as well as for visual function.
These acids are not found in vegetable oils, although they are also of vegetable origin. In the plankton of the seas, fish are part of the diet. The high content of Omega-3 fatty acids in fish is important for balancing the temperature in the cold waters of the seas and oceans.
